Ingredients

Preparation

  1. Rinse the buckwheat in a sieve, bring to the boil with twice its volume of water and a pinch of salt, then cook covered on a low heat for 12 min. Take off the heat and let it steam for 5 min.
  2. Cut the tempeh into 2cm cubes. Dice the onions, cut the pepper into chunks and finely grate the ginger.

  4. Add the remaining oil to the pan and sweat the onions for 4 min until translucent. Add the pepper and ginger and cook for another 3 min.
  5. Stir in the turmeric, cumin, cayenne pepper and 1 tsp garam masala and toast for about 30 seconds until fragrant.
  6. Pour in the tomatoes and coconut milk, stir in the remaining salt and simmer gently over a medium heat for 10 min until creamy and thickened.
  7. Return the tempeh to the pan, stir in the remaining garam masala and let it sit for 3 min. Season with salt to taste and serve on the buckwheat.
